13 Nov Muesli – a good breakfast idea!
In my quest to eat more plants, I was reminded of a recipe that I enjoyed when I lived overseas in England. Muesli is a great breakfast option – a cereal of sorts – that is plant-based packed with fiber, protein, and deliciousness. Just like most recipes – you alter to your own taste but it starts with raw oats and you add nuts and dried fruit. Here’s my basic recipe that I ad-lib depending on what I have on hand. Serve with a sliced banana or blueberries, a dash of cinnamon and almond milk instead of cow’s milk to keep it plant-based. Some folks will heat it slightly too.
Steel-cut Oats – one container
1/2 cup raisins
1/2 cup cranberries
1/4 cup of toasted raw sunflower seeds
1/4 cup of toasted chopped walnuts
1/4 cup of toasted almonds
*I toast all the seeds in a dry skillet on the stove on low heat stirring until slightly brown – immediately move to a dry bowl to cool – they scorch easily.
